I love to cook. And this Mother’s Day I am cooking for my mother and father and my family. I know some mom’s want the entire day off but I honestly don’t mind. Cooking a Mother’s Day Brunch is the least I can do for my wonderful mother.
This year I put together a brunch menu and I am really excited about it. Here are all of the recipes!
Mothers Day Brunch
Yogurt Berry Crunch Parfait
Thirty Minute Orange Knots
Avocado Toast with Poached Egg
Yield: 6 servings
Yogurt Berry Parfait
These berry parfaits are the perfect start to a special breakfast or Mother's Day Brunch.
Prep Time10 minutes
Cook Time20 minutes
Total Time30 minutes
Ingredients
- ½ cup all-purpose flour
- ¼ cup sugar
- 1 teaspoon ground cinnamon
- ½ cup rolled oats
- ¼ cup unsalted butter, melted
- 2 cups vanilla yogurt
- 1 cup fresh raspberries
- 1½ cups strawberries, halved
Instructions
- Preheat oven to 325º.
- Line a lightly greased baking tray with parchment paper.
- Place the flour, sugar, cinnamon, oats, and butter in a
medium bowl and mix to combine. - Spread over a baking tray and bake for 20 minutes or
until golden. Set aside to cool. - Spoon half the yogurt into 6 x ¾-cup-capacity containers,
top with half the fruit and crumble mixture. - Top with the remaining yogurt, fruit and crumble to serve.
These Best Breakfast Orange Knots are probably one of the best breakfast bread I have ever tasted.
Yield: one dozen
Best Breakfast Orange Knots
These are the easiest and most delicious breakfast bread ever!

Ingredients
- 1 16 oz. can refrigerated biscuits
- 3 TBL butter, melted
- 2 TBL granulated sugar
- 1 TBL orange zest
- Glaze
- 1/4 cups confectioners sugar
- 1 TBL orange juice
- 1/2 tsp orange zest
Instructions
- Preheat oven to 375 degrees.
- Line a baking sheet with parchment paper. Mix granulated
sugar and 1 TBL of orange zest together in a shallow bowl. - Cut each biscuit in half and roll each biscuit into a rope. Tie
each rope in a loose knot. Tuck the ends underneath the knot. Place on
parchment paper-lined baking sheet. - Brush tops of knots with melted butter. Dip buttered tops in
orange sugar mixture. - Bake for 8-10 minutes. Watch carefully so the sugar doesn’t
burn. - While knots are baking, make the orange glaze.
- Mix powdered sugar, orange juice, and remaining orange zest
together. - Brush knots with orange glaze while they are still warm.
- Let cool for about 2-3 minutes. Serve.
You can store Orange Knots in an airtight container and
serve the next day. They are best warmed in the microwave for about 10-15
seconds.
Finally, I made Avocado Toast with Poached Egg. I have been a huge fan of Avocado Toast and I love it with poached eggs!
Yield: 4 servings

Ingredients
- 4 eggs
- 2 ripe avocados
- 2 teaspoons lemon juice
- 4 slices thick bread
- salt & freshly ground black pepper
- 4 teaspoons butter (for spreading on toast)
Instructions
- Prepare the avocados by cutting the avocados in half and removing the seed. Cut
into slices. - Sprinkle avocado with lemon juice and salt & pepper.
- Poach eggs using your favorite method. I recently bought an
egg poaching pan and I love it. - Meanwhile, toast the bread and spread with butter.
- Assemble accordingly.
You can make the yogurt parfaits and knots an hour or so ahead of time. About fifteen minutes before you are ready to serve, pop the knots in the oven and start the avocado toasts. All of your guests will be pleased!
