  • Carrot: Not too many carrots are used since they can be high in carbs in larger quantities but just a little bit are perfect for this recipe. Vibrant crunchy carrots add texture and fresh flavors!
  • Bell Pepper: Half a cup of red bell pepper is added to the other veggies to create mouthwatering fragrances that are pleasant and satisfying. Any colored bell pepper will do yellow, green, or orange.
  • Garlic: Freshly minced garlic is a staple for most of my savory recipes because it adds a ton of flavor to each dish. Ground garlic is not the same as fresh garlic as far as flavors go but can be used in a pinch.
  • Cauliflower Rice: Make your own cauliflower rice by ricing it with a food processor, cutting it with a knife, or grating it with a box grater. You can make cauliflower different ways at home and is quite easy to do! Alternately, frozen cauliflower rice from the store will work to save on time.
  • Peas: Frozen peas add a bit of sweetness to the fried rice and rounds all of the other vegetables out.
  • Green Onions: Fresh green onions are optional but highly recommended for garnishing the shrimp stir fry right before serving!

  • Vegetable Oil: Use any kind of vegetable cooking oil for this stir fry. Some of our favorite cooking oils include: olive oil, grapeseed, and avocado oil.
  • Salt and Pepper: Classic sea salt and freshly cracked black pepper are used to season the stir fry to perfection. Use however much as needed but be mindful.
  • Eggs: Fluffy scrambled eggs tie this stir fry together and makes it taste like your favorite restaurant’s fried rice.
  • Soy Sauce: Salty, rich soy sauce flavors this stir fry and makes it pungent and delicious. Tamari or coconut aminos will work in place of the soy sauce for gluten-free and sugar-free options.
  • Sesame Oil: Nutty, toasted sesame oil is aromatic and clean in flavor. Without the sesame oil, this cauliflower stir fry recipe is just not the same!
  • Shrimp: Be sure to use peeled and deveined shrimp for this recipe. If you are using frozen shrimp, then be sure to thaw it just before cooking. You will also want to make sure you have paper towels handy to pat the shrimp dry.

HOW TO MAKE FRIED RICE SHRIMP WITH CAULIFLOWER

  • Make the cauliflower rice: First, if you are ricing the cauliflower from scratch, then be sure to prepare that first to make sure it is prepped and ready. You can use either a food processor or chop it by hand.
  • Cook vegetables: Next, heat the cooking oil in a large pan over medium-high heat. Add the chopped onions and carrots to the hot oil and allow them to cook for about five minutes until fragrant and softened. Next, add the diced red bell pepper to the veggies along with garlic and cook for a couple more minutes.
  • Add eggs: Then, season the vegetables with salt and pepper until they taste exactly how you want them to. Remove the vegetables from the pan. Add more oil to the pan, then add the eggs. Scramble the eggs by breaking them up with a spatula until softened and fluffy. Season with more salt and pepper to make sure they are flavorful.
  • Cook the shrimp: Add the cauliflower rice, sautéed vegetables, and frozen peas to the pan. Next, stir in the soy sauce and sesame oil to provide extra tasty notes and cook for three minutes. Pat the deveined peeled shrimp dry with a paper towel so it can absorb the salt and pepper. Add the shrimp to the pan and cook for four minutes until lighter in color.
  • Stir and serve: Stir everything together until combined and fully cooked. Serve the cauliflower stir fry with vegetables hot with freshly sliced green onions.

Ingredients

  • 3 Cups of riced cauliflower
  • 1 Tablespoon Vegetable oil divided use
  • ½ Cup Onions finely chopped
  • ½ Cup Chopped carrots
  • ½ Cup red bell pepper chopped
  • ½ Cup frozen peas
  • 2 teaspoons minced garlic
  • 2 eggs lightly beaten
  • 2 tablespoons soy sauce, or more to taste
  • 1 tablespoons toasted sesame oil
  • ¾ pounds shrimp peeled and deveined
  • optional: sliced green onions for garnish
  • salt and pepper to taste

Instructions

  • In a skillet, heat 2 teaspoons of the vegetable oil over medium-high heat.

  • Add the onion and carrot to the pan, cook 3-5 minutes or until softened. Stir in the red bell pepper; cook 2-3 minutes more. Add the garlic and cook for 30 seconds.

  • Season to taste with salt and pepper. Remove the vegetables from the pan, place them on a plate and cover to keep warm.

  • Pour the remaining teaspoon of oil into the pan; add the eggs and cook, stirring occasionally and breaking up with a spatula until the eggs are scrambled and cooked through. Season with salt and pepper.

  • Add the cauliflower rice, reserved cooked veggies and frozen peas to the pan. Stir in the soy sauce and sesame oil and cook until cauliflower has just softened 2-3 minutes. Sprinkle the shrimp with salt and pepper and add to the pan; cook for 3-4 minutes, stirring occasionally, or until shrimp is pink and opaque.

  • Serve immediately, sprinkled with sliced green onions if desired.

    I recently discovered I’m allergic to eggs. Anything else I can add so I don’t feel like km missing the egg?

      You can totally make it without eggs! But if you want to replace eggs when baking you can sub one egg for 1/4 cup apple sauce or 1 tablespoon of flaxseed mixed with 3 tbps of water. Keep in mind that they may not be as fluffy as using eggs. Hope this helps!

        I used frozen cauliflower and frozen peas with carrots because this was what I had on hand. Love how simple this recipe is!! The garlic, onion and red pepper is perfect. I used the last of the frozen shrimp which was a big plus along with the sesame oil, I used low sodium soy sauce. This was a big hit with my husband but next time I will use fresh carrots and cauliflower. The frozen ingredients added extra liquid but it did cook down. I will be trying your other dishes soon!!
