Before leaving for Key West this past weekend, I was on a cooking streak. Maybe it was the knowledge that I wouldn't have to cook all weekend that gave me the extra creativity, but I was all about the quick dinner recipes, especially this Chicken Cordon Bleu Recipe featuring aLand O’Lakes Sauté Express® Sauté Starter that I picked up at Walmart!

Creating mouth-watering meals for your family on a busy weekday night can be a daunting task, I know! I love food, I love to eat, and I love sitting down to a dinner that I prepared from scratch and knowing that it's every bit as good as a meal I could have paid $20 for at a restaurant. The problem is that I don't especially love cooking...or the clean up! Quick dinner recipesthat use only one or two pans and don't take a long time to cook are my favorites!

I love chicken cordon bleu, but it can be a total pain to prepare after a long day at work. Instead of following step by step instructions from the classic recipes, I came up with my own quick dinner recipe version using aLand O’Lakes Sauté Express® Sauté Starter...in one pan!

TheLand O’Lakes Sauté Express® Sauté Starter comes in a few different flavors: Lemon Pepper, Teriyaki, Savory Butter and Olive Oil, Italian Herb and Garlic and Herb, and retail in most places for under $3 a package, with 6 packets each. Our Walmart only had two in stock so I grabbed the Garlic and Herb variety. You can read about my shopping trip in this Google+ album!

I liked thisLand O’Lakes Sauté Express® Sauté Starter so much that I think I am going to try it again for other quick dinner recipes! It tastes great with chicken and also potatoes, so I wonder what else I can use it for? Maybe pork chops or a steak?

Chicken Cordon Bleu Recipe

Ingredients

2 Land O’Lakes Sauté Express® Sauté Starter Garlic and Herb squares
4 boneless, skinless chicken breasts, pounded thin
4 slices of prosciutto
1 package Guyere cheese, shredded thinly

Directions

Pound your chicken breasts until they are about 1 inch in thickness.

I prefer to spend a little extra on really good cheese because the wrong flavors can totally ruin a dish. I buy a block of Guyere and shred it myself. To make this dish even less expensive and less hassle, you can buy shredded Swiss cheese, or just use a slice of Swiss!

Place a slice of prosciutto on top of your chicken breast, then top with shredded Guyere cheese and fold in half.

You can secure it with a toothpick or just be extra careful when handling it so that the goodies don't fall out!

Place one square ofLand O’Lakes Sauté Express® Sauté Starter in a pan over medium heat and let simmer until it breaks down.

This is the easiest part: set your chicken breast in the pan and let it saute for about 5 minutes, then flip onto the other side.

I covered my pan with a lid so that the inside of the chicken cordon bleu cooked evenly as well. You can open the chicken and check for done-ness inside.

I served this quick chicken recipe with steamed asparagus and diced baby potatoes - also sauteed inLand O’Lakes Sauté Express® Sauté Starter!

    You really can't go wrong with chicken, cheese and prosciutto! You can even just use ham or even bacon if they don't like prosciutto!
