Cheesy Ranch Potatoes– Diced red potatoes with bacon and cheese in a creamy ranch sauce, topped with crisp buttery crumbs. Unbelievably delicious alongside just about any meal!!

I LOVE this cheesy bacon ranch potato casserole. So much. With sour cream, bacon, ranch, and cheese, of course they have amazing flavor!

I use my homemade ranch dressing, and it makes them absolutely incredible, but you can use hidden valley ranch dressing instead.

We had them for Christmas Eve dinner with ham, spinach salad, cooked carrots, rolls, and cheesecake. I ate more of these potatoes than anything else- that tells you how good they are!

HOW TO MAKE CHEESY BACON RANCH POTATOES

  1. PREP – Scrub potatoes and cut into ½ inch cubes. If your bacon isn’t cooked, cook it until crispy. Grate cheese. Place cornflakes in a ziplock bag and crush with a meat mallet or rolling pin. Spray a 9×13” pan with cooking spray.
  2. POTATOES – Cook cubed potatoes in a large pot over medium high heat in salted water until tender, 20-25 minutes. Drain and place into a large mixing bowl.
  3. COMBINE – Add the sour cream, ranch dressing, bacon, 1 cup of cheddar cheese, and parsley. Stir till potatoes are well coated, then pour into the prepared pan.Cheesy Ranch Potatoes Recipe - Creations by Kara (2)
  4. TOPPING – Sprinkle ½ cup cheddar cheese over the potatoes. Melt butter in a glass bowl; stir in the crushed corn flakes. Sprinkle over the cheese. Cheesy Ranch Potatoes Recipe - Creations by Kara (3)
  5. BAKE – Bake at 350° for 40-45 minutes, or until hot and bubbly.

Leftovers? Store any leftover potatoes in the refrigerator in an airtight dish, or covered tightly with plastic wrap. They will last for 3-4 days.

You can reheat individual servings in the microwave for a minute or two.

Or you can cover the dish with foil and reheat in the oven. Just place the cold dish in the oven and turn the heat to 350. Cook for 25-30 minutes, or until hot. You may need to add a bit of water so the empty side of the dish doesn’t burn.

Do I have to use red potatoes?

No, you can use russet potatoes or even baby potatoes. As long as you boil them until they are tender first, any kind of potato should work.

Amazing Cheesy Ranch Red Potatoes

Creamy red potato casserole loaded with ranch, sour cream, bacon and cheddar cheese.

Ingredients

Potatoes

  • 7 red potatoes, scrubbed and cubed (more or less, depending on size)
  • 3/4 cup sour cream
  • 3/4 cup ranch dressing
  • 1/4 cup cooked, crumbled bacon
  • 1 cup grated cheddar cheese
  • 2 tsp dry parsley

Topping:

  • 1/2 cup grated cheddar
  • 2 cups crushed corn flakes
  • 3 Tbsp melted salted butter

Instructions

  1. Cook bacon until crispy. Scrub potatoes and cut into 1/2 inch cubes. Boil potatoes in a large pot of salted water for 15-20 minutes or till crisp tender.
  2. While potatoes are cooking, crush cornflakes in a ziplock bag using a rolling pin. Spray a 9x13" pan with cooking spray. Preheat oven to 350 degrees.
  3. Drain potatoes and place in large mixing bowl. Add sour cream, ranch dressing, bacon, 1 cup cheese, and parsley. Stir gently till blended.
  4. Pour into prepared pan. Sprinkle with 1/2 cup cheese. Combine corn flakes and butter, sprinkle over the top. Bake at 350° for 40-45 minutes or until hot and bubbly.

Notes

If the potato mixture seems dry, you can add some milk with the sour cream and ranch dressing.
